Characterization of the Volatile Profile of Cultivated and Wild-Type Italian Celery (Apium graveolens L.) Varieties by HS-SPME/GC-MS

Celery (Apium graveolens L.) is a vegetable belonging to the Apiaceae family that widely used for its distinct flavor and contains variety of bioactive metabolites with healthy properties. Some celery ecotypes cultivated in specific territories Italy have recently attracted attention consumers scientists because their peculiar sensorial nutritional In this work, volatile profiles white “Sedano Bianco di Sperlonga” Protected Geographical Indication (PGI) ecotype, black Nero Torricella Peligna” wild-type were investigated using head-space solid-phase microextraction combined gas-chromatography/mass spectrometry (HS-SPME/GC-MS) compared common ribbed celery. Exploratory multivariate statistical analyses conducted principal component analysis (PCA) on HS-SPME/GC-MS patterns, separately collected from leaves petioles, assess similarity/dissimilarity composition varieties. PCA revealed clear differentiation Among varieties, exhibited significantly different profile both petioles prevalent commercial variety. The chemical components aroma, potentially useful classification according variety/origin, identified.
